The winery was founded in 2002, initially in Moshav Shekef with the notion of having it near the vineyards, but after several years where I had to make countless and tedious trips, because I live in Eilat, I decided to move the winery next to me so that I could handle all the process of winemaking to perfection.
With the help from my childhood friend, Eyal Gordin, I realized the dream of moving the winery to Eilat and built it right behind my house. This way, at all times, the winery will be under my close supervision.
After moving to Eilat, in 2007, I picked for the supply of grapes, the Judean Mountains region – In my mind, the best area for grapes in the country because of weather, amount of rainfall, chalky soil, sun and the relative dryness – "Terroir", in the language of the experts.
I chose the Tal farm, in Yosef vineyards as the supplier for the grapes, due to the goodwill and seriousness that the team exhibits, as well as the stability over time supplying the grapes. Also, their attention to my special needs as a winery in Eilat.
It is well known, that a good wine starts with quality grapes, adherence to all phases of preparation as well as professional equipment and instrumentation. In our winery, we apply all these, including the use of a laboratory to perform all the necessary examinations during winemaking. This way, the winery can boast superb wines.
Over the years the winery has gained a great reputation. We won medals in international wine competitions and it is currently sold in stores and in several restaurants in Eilat and elsewhere.
The winery produces only red wines. Every year we produce Cabernet Sauvignon and Merlot, along with
additional species such as Sangiovese, Carignan, Shiraz and more. Depending on the quality of different varieties each year.
Our wines are characterized by a deep dark color, due to the long fermentation process on "the peels". The bold flavor is a result of the long stay in barrels. Clean and sterile enviroment in the workplace, ensure a fine wine, suitable for a long aging process.
The winery now produces 6,000 bottles a year, of which a limited set, a series of Grand-Vin superb, is our pride and joy. The Grand-Vin, rests in the new barrels for is 25 months, which gives the wine depth, thickness and special aroma.
In general, all our wines are produced from grapes that are harvested late in the season, in order to get high percentage of sugar (while maintaining a balanced acidity). That ensures an intense fermentation process and relatively high alcohol percentages. It also enables us to avoid using high doses of preservatives, like MetaBiSulphate. In addition, all our wines do not undergo filtering, only utilizing gravity. This procedure preserves the deep color of the wine and the taste and aroma.
Our wine is also remarkably clear and pristine due to the large number of rackings during the preparation.
The winery is in the midst of a substential development with an aim of establishing the quality winery that we are, including a visitor center and tasting rooms.
